The Anytime Omelette

Our healthy omelette, is simple, quick, wonderfully tasty and perfect for any meal, you can dress it up with sides, or eat it on its own. Its perfect for almost any occasion.For me, I just love the tastes and variations you can make with small changes in ingredients, and above all, just how quick I can go from “nothing to eat” to a satisfying meal on a plate in under 15 minutes.

Ingredients
  

  • 6 Large Eggs beaten
  • 3 oz Mushrooms halved,then sliced
  • 2 oz Red Onion diced, or use sweet onion if you prefer
  • 1 oz Non dairy cheddar cheese shreds we use Follow Your Heart Cheddar Shreds
  • 1 cup Fresh Baby Spinach roughly chopped (substitute baby kale as a change)
  • 1.5 tbsp Coconut Oil
  • 1 tbsp Fresh Cilantro or any you like, including dried mixed herbs
  • Salt & ground black pepper to taste

Instructions
 

  • In a large bowl, beat together the eggs, cheese shreds, chopped herbs and a little salt and freshly ground black pepper. Set to one side
  • Heat coconut oil in a large pan or skillet (whatever your preferred omelette pan is)
  • Fry the onions and mushrooms in the pan
  • When done, add the spinach or kale and stir the mixture until the greens are lightly wilted (we like them still nice and bright green)
  • Add the omelette mix, quickly stir to distribute the veg, cook to your desired taste, about 2 minutes each side works for me
  • Fold the omelette over in the pan (makes it look even thicker), then cut the folded omelette into equal halves and serve

Notes

Add or change out any of the veg to make it different every time, or if you aren’t looking for dairy free, adding a nice raw cheese would be a wonderful taste addition
