Combination of 2 recipes... Coronation Chicken Salad and Paleo Herb Flatbreads, brings us to a great lunch option that can be taken with you, has a ton of flavor and will fully satisfy your hunger!

Ingredients
  

  • 2 servings Coronation Chicken Salad
  • 4 flatbreads Paleo Flat Bread
  • 2 oz Fresh Baby Spinach

Instructions
 

  • Lay the wraps out and layer each with 1/2 oz of spinach
  • Take 1/2 portion of the coronation chicken salad, and place down the center of the flat bread... wrap it up!

Notes

Recipe time assumes you have some coronation chicken and flat breads made up and in the refrigerator ready to go.
TIP: I make 8-12 flat breads at a time and refrigerate and/or freeze them.

Bursting Breakfast Burrito

Here's a new breakfast twist... bursting breakfast burrito is fun to eat (read tricky) and totally satisfying. As with a number of our recipes, you can use this as a base, to add your own touches to the dish. Looking forward to hearing what you've done to make it your own.

Ingredients
  

  • 1 tbsp Coconut Oil
  • 2 oz Red Onion thinly sliced
  • 2 oz Baby Bella Mushrooms
  • 4 eggs Large Eggs beaten
  • 1 tsp Turmeric, ground
  • 1 tsp Mustard powder
  • Salt & ground black pepper to taste
  • 1 oz Non dairy cheddar cheese shreds we use Follow Your Heart Cheddar Shreds
  • 2 flat breads Paleo Flat Bread <- click for our recipe
  • 1 cup Fresh spinach _roughly chopped

Instructions
 

  • In a large pan or skillet heat the coconut oil over a medium heat, when hot fry the onions for 2-3 minutes until slightly browned at the edges
  • Add in the mushrooms and stir until cooked.
  • With the flat breads on plate, start to layer the burrito, keep most the mixture near the center so that you can roll it more easily. Begin with the spinach, then the egg mixture, then top with the cheese shreds.
  • Roll/fold the flat bread around the filling and eat ­čÖé

Chicken Bacon and Avocado Stuffed Lettuce Wraps

Ingredients
  

  • 4 tbsp Avocado Dip <- click for our recipe
  • 8 oz Roast chicken Chopped meat only
  • 2 oz Non dairy cheddar cheese shreds we use Follow Your Heart Cheddar Shreds
  • 4 tbsp Bacon Crumbles Home made
  • 4 leaves Whole Romaine lettuce leaves
  • Salt & ground black pepper to taste

Optional

  • Cucumber Diced
  • Cayenne or Chili powder
  • Fresh Cilantro Chopped

Instructions
 

  • Add the chicken to the avocado dip and mix
  • Place 1/4 of the chicken/avocado mixture onto each lettuce leaf
  • Sprinkle 1/4 of the cheese and bacon on top of each wrap
  • Serve open, as they look amazing, let the diner wrap them fully to eat

Cook/Prep Time, assume you have cooked chicken, bacon crumbles and avocado dip ready and available in your refrigerator
