Ingredients
  

  • 2 servings Coronation Chicken Salad
  • 4 flatbreads Paleo Flat Bread
  • 2 oz Fresh Baby Spinach

Instructions
 

  • Lay the wraps out and layer each with 1/2 oz of spinach
  • Take 1/2 portion of the coronation chicken salad, and place down the center of the flat bread... wrap it up!

Notes

Recipe time assumes you have some coronation chicken and flat breads made up and in the refrigerator ready to go.
TIP: I make 8-12 flat breads at a time and refrigerate and/or freeze them.

Said to have been prepared for the Coronation Banquet of Queen Elizabeth II, this creamy, and tasty chicken salad is at home in flat breads, lettuce wraps, or on it's own! Although traditionally prepared with cold chicken, raisins, herbs and curry spices... we've made a few modifications to increase the fats and keep the carbs to a minimum.

Ingredients
  

  • 5 oz Cooked Chicken (Diced)
  • 5 oz Avocado (Diced)
  • 2 oz Cucumber (Finely Diced)
  • 1 oz Red Onion (Finely Diced)
  • 1 tbsp Golden Raisins
  • 2 tbsp Healthy Homemade Mayo
  • 2 tsp Stone Ground Mustard
  • 1 tbsp Aromatic Curry Powder
  • 1/2 tsp Himalayan Salt (or to taste)
  • 1 tbsp Fresh Cilantro Chopped

Instructions
 

  • Add all the ingredients into a bowl... and mix thoroughly. DONE!

Lentil Soup (Dal)

This Lentil soup is a modified version from cookeandkate.com. It's now "nightshade free" and increase the healthy fats. Yes, I said INCREASE the healthy fats. If nightshades aren't an issue for you, feel free to cut the amount of carrots in half, add some roasted tomatoes and turn up the heat with some red pepper flakes.  Of course, if you still want a bit of heat without impacting inflammation, you can add a bit of shredded horseradish.

Ingredients
  

Saute Ingredients

  • 1.5 cups Sweet Onion approximately, one large onion
  • 2 cups Carrots approximately 4 medium size carrots
  • 4 cloves Garlic
  • 1/4 cup Olive Oil, Extra Virgin

Spices

  • 1 tsp Ground Cumin
  • 1 tsp Aromatic Curry Powder
  • 1/2 tsp Dried thyme
  • 1 tsp Ground black pepper
  • 1 tsp Himalayan Salt

The Rest

  • 4 cups Vegetable broth
  • 1 cup Sprouted Green Lentils
  • 2 cups Kale or Spinach
  • 3 tbsp Lemon juice or juice from half a large lemon
  • 2 cups Water

Instructions
 

  • Heat the olive oil in large pot or dutch oven and add the first set of ingredients ( onions, garlic and carrots). Cook until they start to shine (the onion becomes a little translucent)
  • Add the spices and heat until you can smell the aroma
  • Add the lentils, broth and water then bring to a boil for 2 minutes
  • Lower the heat to simmer for 25-30 minutes or until lentils are tender but not mooshy
  • Take 2 cups of the soup and place in the blender and puree
  • Add the puree soup back into the pot adding the Kale (or spinach) until softened.
  • Remove from heat, stir in the lemon juice and serve!

Vegan Roti Bread

Not just for Indian food anymore, this works well in place of any flat bread. Wrap it, tear it, soak it, dip it. You can make it as sweet or savory as you like with your own herb combinations.

Ingredients
  

Dry Ingredients

  • 1/2 cup Arrowroot starch
  • 1/3 cup Coconut flour
  • 1/4 cup Ground Flax Seeds
  • 1 tsp Baking Soda
  • 1/2 tsp Himalayan Salt
  • 1/4 cup Shredded coconut, Unsweetened Optional : can also use ground coconut

Wet Ingredients

  • 1 can Coconut Milk full fat

Instructions
 

  • Preheat oven to 400 degrees
  • Combine all the dry ingredients and mix well.
  • Add coconut milk to dry ingredients and mix well.
  • Let the mixture stand for 5 minutes to set.
  • Line a cookie sheet with parchment paper.
  • Spray a mall frying pan with Spectrum Coconut oil spray and heat up pan on medium high heat.
  • Using a 1/4 cup measure, add mixture to the pan and spread out until the bottom of the pan is covered.
  • Cook until golden on both sides
  • When cooked, remove and place on the parchment lined cookie sheet.
  • Repeat with the rest of mixture.
  • Once completed with frying, place the cookie sheet with pieces of bread in the oven.
  • Bake for 10-15 minutes until desired crispness.

Notes

The addition of shredded coconut to this Vegan Roti Bread is optional depending on how sweet you want it to be. Feel free to add your own mixture of spices and herbs to your desired taste. If you'd like a thinner bread, feel free to add 2-3 tbsp of water to the mixture.

Aromatic Curry Powder - Nightshade Free

There are a ton of great store bought curry powders or spices out there, but finding one that is nightshade free... now that's a challenge. Most contain paprika as a minimum, some also have chili. Needless to say, we make our own, it take a couple of minutes, a quick shake and its ready to go.

  • 4.5 tsp Coriander, ground
  • 2 tsp Turmeric, ground
  • 1.5 tsp Cumin, ground

  • 1/2 tsp Ginger, ground
  • 1 tsp Mustard powder
  • 1 tsp Ground Cinnamon

Instructions
 

  • Place all the spices in a jar and shake well
  • Done

Notes

All of the spices are dried ground spices, they can be easily bought from the supermarket, or if you have a spice grinder, you can use place the seeds/pods in that to grind fresh.  It does make a difference.
