Mini Paleo Protein Muffins
These PALEO mini protein muffins make a great snack, breakfast or even desert. An extremely versatile recipe, you can swap out the chocolate chips and add berries, change the protein powder. We even made it VEGAN using Chia eggs.

Instructions
Chia Eggs
  1. Add the 2 tbsp of ground chia seeds to 6 tbsp of water
  2. Let sit for 5 minutes until it becomes goopy
Making the muffins
  1. Preheat oven to 350F. Lightly grease your muffin tins with a coconut oil
  2. In a large mixing bowl, combine all the dry ingredients and mix well
  3. Pour in all the wet ingredients, and the Chia Eggs (or you can use to regular eggs if preferred). Mix well
  4. Add the chocolate chips and gently fold in
  5. Spoon the mixture into the mini muffin tins
  6. Bake for 20-22 minutes, remove from the tin, let it cool (if you have the will-power) and enjoy
Recipe Notes

1 tbsp of Ground Chia Seeds, mixed with 3 tbsp, is equivalent to 1 large egg
