Carrot and Ginger Soup

Winter Warmer... A real hit of ginger brings this simple carrot soup to life. Perfect for those short winter days, where you need to bring a little sunshine to your dinner table.

  • 3 tbsp Coconut Oil
  • 2 oz Red Onion diced
  • 3 cloves Garlic diced
  • 2 oz Ginger, Fresh finely chopped
  • 16 oz Carrots roughly chopped
  • 2 cups Vegetable broth Home made is best
  • 1/4 tsp Salt & ground black pepper to taste
  • 1 tsp Ground Cinnamon


  • Saute the onions in the coconut oil, over a medium heat until they have softened, but not browned
  • Add in the carrots, ginger and garlic stirring for 1-2 minutes until the garlic starts to brown
  • Add the stock, stir, reduce the heat and simmer until the carrots are cooked & soft
  • Carefully poor the hot mixture into a blender and blend until smooth
  • Sprinkle some fresh cilantro (coriander) over the top to garnish and serve

TOPTIP : Don’t spend too long chopping/prepping, its going in a blender at the end anyway :)
If you’d like to add a little kick, then 1 tsp of cayenne pepper goes really well in this dish, but does mean it wouldn’t be nightshade free
