Paleo Vegan Cookies

This recipe was inspired from detoxinista.com around 12 months ago, its Paleo, Vegan and really tasty. It was a specific mission from one of our daughters to find something healthy and vegan to take with her for a school lunch. These are perfect for a healthy morning or afternoon snack. We love them. First attempt these came out just perfect, we love them, and they are now on our list of “healthy snacks”

Ingredients
  

1x Flax Egg

  • 1 tbsp Ground Flax Seeds or Chia Seeds
  • 3 tbsp Water

Instructions
 

  • Make the "flax egg", allow to sit for 5 minutes before adding to the mixture
  • Preheat the oven to 350F
  • Add Dates, Walnuts to the food processor, blend until you get a “crumbly” texture
  • Add in the remaining ingredients, including the flax egg (except chocolate chips) and blend until well combined (smooth if you want a smoother cookie)
  • Add in the Choc Chips and pulse to combine (very brief)
  • With a spoon, place “cookie sized portions” of the mixture onto a baking sheet, lined with parchment paper.
  • Bake @ 350F for 12 minutes, or until slightly golden

Notes

These cookies are great served straight away, or will keep for about a week in the fridge…. They would never make it to a week in our house :) If you have the will power, they will freeze for about a month
